  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1 1/2 pounds calf’s liver, sliced thin
  • 3/4 cup fine, dry, unflavored bread crumbs
  • Lemon wedges

Instructions
  1. Press liver slices into bread crumbs firmly.
  2. Heat oil and butter.
  3. Fry slices rapidly (don’t overlap) until crisp and brown.
  4. About 1 minute total cooking time.
  5. Serve immediately with lemon.
