2 tablespoons butter
1 1/2 pounds calf’s liver, sliced thin
3/4 cup fine, dry, unflavored bread crumbs
Lemon wedges
Method
Instructions
Press liver slices into bread crumbs firmly.
Heat oil and butter.
Fry slices rapidly (don't overlap) until crisp and brown.
About 1 minute total cooking time.
Serve immediately with lemon.
