Ingredients
  

Main Ingredients
  • 1 1/2 pound eggplant
  • 1 egg
  • 2 cups unflavored bread crumbs
  • Vegetable oil
  • Salt

Method
 

Instructions
  1. Peel eggplant, cut lengthwise into 1/8-inch slices.
  2. Steep in salt, dry well.
  3. Dip in beaten egg, then coat in breadcrumbs.
  4. Press crumbs firmly onto slices.
  5. Fry in 1.5 inches of hot oil until golden and crisp.
  6. Drain and salt.
