Breakfast Patties

Breakfast Patties

These simple breakfast patties are a morning staple made with just ground pork or beef and a touch of sea salt. Cooking them in rich lard or tallow gives the outside a beautiful crust while keeping the inside juicy. They are perfect for meal prep because you can make a large batch and keep them ready in the fridge or freezer. Serve them alongside eggs or tuck them into a morning sandwich for a quick start to your day.

Ingredients

  • 2 pounds ground pork or ground beef
  • 2 teaspoons fine sea salt
  • 2 tablespoons lard or tallow ( here )

Instructions

  1. 1Combine the ground meat and sea salt in a large mixing bowl. Use your hands to thoroughly blend the salt into the meat, then shape the mixture into twelve patties about three inches wide.
  2. 2Warm the lard or tallow in a cast-iron skillet over medium-high heat. Place the patties into the hot fat, cooking them in batches so they have plenty of space in the pan.
  3. 3Sear the patties for four minutes before flipping them. Cook the second side for another four minutes until the meat is completely cooked through with no pink remaining in the center.
  4. 4Transfer the finished patties to a plate to cool. Pack them into an airtight container to keep in the refrigerator for up to five days or freeze them for up to six months.
  5. 5Reheat the chilled or frozen patties in a lightly greased cast-iron skillet over medium heat. Cook them for a few minutes per side until they are hot all the way through.
