2 pounds ground pork or ground beef
2 teaspoons fine sea salt
2 tablespoons lard or tallow ( here )
Instructions
1Combine the ground meat and sea salt in a large mixing bowl. Use your hands to thoroughly blend the salt into the meat, then shape the mixture into twelve 3-inch patties. Don't overmix, or the meat will become tough.
2Warm the lard or tallow in a cast-iron skillet over medium-high heat. Place the patties into the hot fat, cooking them in batches so they have plenty of space in the pan. Crowding the skillet lowers the temperature and prevents a good crust from forming.
3Sear the patties for 4 minutes before flipping them. Cook the second side for another 4 minutes until the meat is completely cooked through with no pink remaining in the center.
Notes
Storage: Keep cooled patties in an airtight container in the refrigerator for up to 5 days, or freeze them for up to 6 months.
Reheat: Warm chilled or frozen patties in a lightly greased cast-iron skillet over medium heat for a few minutes per side until they're hot all the way through.
