Ingredients

  • 1 lemon
  • 1 cup thinly sliced red onion
  • 3 tablespoons whole-wheat flour, white whole-wheat flour, or all-purpose flour
  • ½ teaspoon black pepper, divided
  • ¼ teaspoon smoked paprika
  • 8 ounces halloumi cheese, cut into 8 slices
  • ¼ teaspoon kosher or sea salt
  • 2 tablespoons extra-virgin olive oil
  • 6 cups salad greens
  • 1 cup fresh mint, leaves and stems, torn
  • 1 English cucumber, unpeeled, sliced

Instructions

  1. 1Position the top oven rack about 4 inches below the broiler and preheat the broiler to high, then coat a large rimmed baking sheet with cooking spray.
  2. 2Grate the zest from the lemon into a large mixing bowl, cut the fruit in half, and squeeze out 2 tablespoons of juice.
  3. 3Reserve any leftover lemon juice for another recipe, then stir the sliced red onion into the bowl and set it aside to soften.
  4. 4Whisk the flour, one-quarter teaspoon of black pepper, and smoked paprika together in a shallow dish, then press each cheese slice into the mixture to coat both sides, shaking off the excess.
