Cheesy Bacon Burger Bites

These bite-sized mini cheeseburgers pack all the classic flavors of a bacon burger onto a single skewer. Ground beef is mixed with cheddar cheese cubes and savory seasonings before being seared in bacon drippings for a rich, smoky crust. Fresh cherry tomatoes, crisp romaine lettuce, and a piece of bacon crown each patty. They make a fantastic appetizer for game days, casual parties, or weekend entertaining.

Ingredients

  • 7 slices bacon
  • 28 fancy toothpicks
  • 28 cherry tomatoes
  • 3 leaves romaine lettuce, cut into 28 (1½-inch) pieces
  • ½ cup Original Bisquick ® mix
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 lb lean (at least 80%) ground beef
  • 1 egg
  • ¼ cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 2 oz Cheddar cheese, cut into ¼-inch cubes (about ½ cup)

Instructions

  1. 1Cook the bacon in a skillet over medium heat until browned but still pliable. Transfer the bacon to a paper towel to drain, leaving one tablespoon of the drippings in the pan. Cut each slice of cooked bacon into four equal pieces.
  2. 2Thread one cherry tomato, one piece of bacon, and one piece of romaine lettuce onto each of the twenty-eight toothpicks. Set these aside for later assembly.
  3. 3Combine the ground beef, Bisquick mix, salt, pepper, egg, mayonnaise, and Worcestershire sauce in a large mixing bowl. Gently fold in the cubed Cheddar cheese. Portion the mixture into twenty-eight small balls and flatten them slightly to resemble miniature hamburger patties.
  4. 4Warm the reserved bacon drippings in the skillet over medium-high heat. Sear the mini burger patties in the drippings for four to six minutes, flipping once, until they are completely cooked through with no pink remaining in the center.
  5. 5Push one prepared toothpick skewer into the center of each cooked burger patty to assemble the bites.
  6. 6Substitute pepper Jack cheese for the Cheddar and use hot pepper sauce instead of Worcestershire sauce to create a spicier flavor profile.
  7. 7Serve the finished burger bites immediately alongside small bowls of ketchup and mustard for dipping.
