Boozy Cherry Vanilla Ice Cream Sundaes

Maraschino cherries sit in a quarter cup of Southern Comfort for at least eight hours, drawing the liqueur into the fruit and turning the syrup slightly amber. Spooned over cherry-vanilla ice cream in small glasses, the boozy cherries cut through the dairy sweetness with a sharp, warm note. Three ingredients, four portions, no cooking. Plan the overnight soak the day before and assembly takes two minutes.

Ingredients

  • ½ cup maraschino cherries with stems
  • ¼ cup Southern Comfort
  • 2 cups cherry-vanilla ice cream

Instructions

  1. 1Combine the cherries and Southern Comfort in an airtight container. Freeze for 8 hours.
  2. 2Drain the liquid and pat the fruit dry. Removing excess surface moisture keeps the ice cream from melting too quickly when layered.
  3. 3Set aside 4 whole cherries for garnish. Remove the stems from the remaining cherries and chop them coarsely.
  4. 4Divide the chopped cherries and cherry-vanilla ice cream evenly among 4 small glasses, building alternating layers. Top each glass with a reserved whole cherry.

Notes

  • Make ahead: You can soak the cherries in the liqueur up to a week in advance. Keep them in the fridge instead of the freezer if soaking longer than overnight.
  • Swap: If you don't have Southern Comfort, bourbon or dark rum works beautifully here.
  • Variation: For a booze-free version, soak the cherries in a splash of cherry juice mixed with a little vanilla extract.
