Christmas Tree Pancake Stacks

Holiday mornings call for something a little more magical than the usual breakfast routine. You'll tint a simple pancake batter green and cook it in graduated sizes to build towering, edible evergreens. It's a fun, hands-on project that gets everyone involved in the kitchen. Finish these fluffy stacks with a sweet milk glaze, a dusting of powdered sugar snow, and your favorite colorful candy ornaments.

Equipment

  • Skillet

Ingredients

  • 4 cups Original Bisquick ® mix
  • 2 cups milk
  • 2 teaspoons green paste food color, if desired
  • 4 eggs
  • 2½ cups powdered sugar
  • 3 tablespoons plus 2 teaspoons milk

Instructions

  1. 1Whisk the pancake mix, 2 cups of milk, green food coloring, and eggs in a large bowl until completely smooth.
  2. 2Warm a griddle or large skillet over medium-high heat, or 375°F. Lightly coat the surface with vegetable oil or cooking spray. A properly heated surface prevents the batter from spreading too thin.
  3. 3Working on one tree at a time, drop batter onto the hot griddle in four distinct amounts: 1/4 cup, 3 tablespoons, 2 tablespoons, and 1 tablespoon. Cook until bubbles form on the surface and the edges look dry, then flip and cook until the bottoms are light golden brown. Transfer to a plate and keep warm.
  4. 4Pour the remaining four batter portions for the first tree onto the griddle using 2 teaspoons, 1 teaspoon, 1/2 teaspoon, and 1/4 teaspoon. Watch these smaller portions closely. They cook much faster than the larger bases.
  5. 5Flip the small pancakes and cook briefly until golden brown. Repeat this entire sizing process with the remaining batter to create five more complete sets.
  6. 6Whisk the powdered sugar and remaining 3 tablespoons plus 2 teaspoons of milk in a small bowl to create a smooth glaze.
  7. 7Build the trees on serving plates by placing the largest pancake at the base and stacking the progressively smaller ones on top. Drizzle the stacks with the sweet glaze, dust with powdered sugar, and decorate with sprinkles.

Notes

  • Make ahead: You can mix the dry ingredients the night before to save time on a busy holiday morning.
  • Tip: Use a squeeze bottle for the smallest pancake portions. It gives you much better control than a measuring spoon.
  • Keep warm: Place finished pancakes on a wire rack set inside a baking sheet in a 200°F oven while you cook the remaining batches.
