Ingredients

  • 1 cup whole wheat flour
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon Celtic salt
  • 1 cup buttermilk
  • ⅓ cup extra virgin olive oil
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 8 ounces low-fat cream cheese, softened
  • ⅔ cup finely chopped and peeled apple
  • 1 tablespoon powdered sugar 1 tablespoon milk ¼ teaspoon cinnamon

Instructions

  1. 1Coat the bottom of a standard loaf pan with a light layer of grease and a dusting of flour.
  2. 2Place the whole wheat flour, sugar, baking powder, cinnamon, Celtic salt, buttermilk, olive oil, vanilla extract, and eggs into a large mixing bowl. Beat the mixture at medium speed for 3 minutes until smooth. This builds structure so the loaf doesn't crumble.
  3. 3Transfer the finished batter into the prepared loaf pan, spreading it out evenly.
  4. 4Bake at 350 degrees for 45 to 55 minutes. Test the center with a wooden toothpick to ensure it comes out clean, then let the bread cool in the pan on a wire rack for 15 minutes. Cooling in the pan prevents the warm loaf from breaking apart.
  5. 5Turn the loaf out of the pan and leave it on the wire rack to cool completely before slicing.
  6. 6Add the softened cream cheese, finely chopped apple, powdered sugar, milk, and cinnamon to a food processor or blender. Process until completely smooth, pausing to scrape down the sides of the bowl as needed.
