Ingredients

  • teaspoon strawberry jam on 1 peanut butter cookie ( page 188 ) and spread 1 teaspoon of ready-to-​spread vanilla frosting on second cookie; press cookies together to form sandwich.
  • 1 cup packed brown sugar
  • ¾ cup shortening
  • ¼ cup molasses
  • 1 egg
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt

Instructions

  1. 1Preheat the oven to 375°F. Prepare your baking sheets by lightly greasing them with shortening or cooking spray, or simply line them with parchment paper or silicone mats.
  2. 2Combine the brown sugar, shortening, molasses, and egg in a large bowl. Beat the mixture with an electric mixer on medium speed until smooth and well blended. Stir in the flour, baking soda, cinnamon, ginger, cloves, and salt until a uniform dough forms.
  3. 3Scoop the dough by rounded teaspoonfuls and roll them into balls. Dip the top of each ball into granulated sugar. Arrange the dough balls on the prepared baking sheets with the sugared sides facing up, leaving about three inches of space between each one.
  4. 4Bake for 10 to 12 minutes, or until the edges are just set. Transfer the cookies immediately from the baking sheets to wire racks to cool completely before assembling your sandwiches.
