- Soak sausage 4 hours.
- Boil sausage gently 2.5 hours (skin intact).
- Sauté onion and celery. Add lentils and water to cover.
- Simmer lentils 30-40 mins until tender.
- Slice hot sausage.
- Serve sausage over lentils.
