1 Cotechino sausage
1 cup lentils
1 tablespoon chopped onion
1 tablespoon chopped celery
2 tablespoons vegetable oil
Method
Instructions
Soak sausage 4 hours.
Boil sausage gently 2.5 hours (skin intact).
Sauté onion and celery. Add lentils and water to cover.
Simmer lentils 30-40 mins until tender.
Slice hot sausage.
Serve sausage over lentils.
