Main Ingredients
  • 1 Cotechino sausage
  • 1 cup lentils
  • 1 tablespoon chopped onion
  • 1 tablespoon chopped celery
  • 2 tablespoons vegetable oil

Method
 

Instructions
  1. Soak sausage 4 hours.
  2. Boil sausage gently 2.5 hours (skin intact).
  3. Sauté onion and celery. Add lentils and water to cover.
  4. Simmer lentils 30-40 mins until tender.
  5. Slice hot sausage.
  6. Serve sausage over lentils.
