Creamy Yogurt Bubble Tea

Icy, tangy, and perfectly sweet, this blended boba shop favorite is surprisingly simple to make at home. Chewy tapioca pearls sit beneath a smooth, frosty mix of green tea, fruit juice, and your favorite yogurt. It's a refreshing twist on classic milk tea that skips the heavy syrups in favor of bright, fruity flavors. You'll love how easily you can customize the base to match whatever juice you have in the fridge.

Equipment

  • Stovetop
  • Blender

Ingredients

  • ¼ cup pearl tapioca
  • 1 container (6 oz) low-fat or fat-free yogurt
  • ½ cup fruit juice
  • 1 cup crushed ice
  • ½ cup brewed green tea, cooled to room temperature

Instructions

  1. 1Cook the pearl tapioca according to the package directions until tender. Rinse them briefly under cold water to stop the cooking process and keep the pearls perfectly chewy.
  2. 2Combine the yogurt, fruit juice, crushed ice, and cooled green tea in a blender. Blend on high speed until the mixture is completely smooth and frosty.
  3. 3Spoon the prepared tapioca pearls into the bottom of a tall glass. Pour the blended yogurt mixture over the top and add an extra-wide straw to catch every pearl.

Notes

  • Variation: For a tropical twist, use piña colada yogurt and pineapple juice, then garnish with a fresh pineapple slice.
  • Make ahead: Brew the green tea in advance and keep it chilled in the fridge so it's ready when you want to blend a drink.
  • Tip: Quick-cooking tapioca pearls work best here if you're short on time. They usually boil in just 5 to 10 minutes.
