Ingredients

  • 8 white bread slices
  • ¾ cup Homemade Mayonnaise (recipe follows)
  • 1 lb. Creole tomatoes, cored and sliced crosswise into ¼-inch-thick rounds
  • ¼ tsp. kosher salt
  • ¼ tsp. black pepper

Instructions

  1. 1Coat one side of every bread slice with an even layer of mayonnaise.
  2. 2Lay the tomato slices flat on a large plate and season them evenly with the kosher salt and black pepper. Transfer the seasoned tomatoes onto the mayonnaise-coated side of four bread slices.
  3. 3Place the remaining four slices of bread on top with the mayonnaise facing inward. Slice the sandwiches in half and serve them right away.
