Crispy on the outside and deeply savory, these pan-fried beef noodles deliver massive flavor with barely any effort. Letting the minced beef clump slightly in the hot pan creates a beautifully browned crust that contrasts perfectly with tender noodles. A quick toss with fresh spring onions, garlic, and a splash of soy sauce builds a rich, aromatic sauce right in the skillet. A pinch of dried chili flakes brings just the right amount of heat to balance the toasted sesame oil. You'll want to keep these simple ingredients stocked for whenever a craving hits.

Ingredients
1 nest of noodles
100g minced beef
1 garlic clove
Pinch of dried chilli flakes
3 spring onions, roughly chopped
Instructions
1Boil the noodles in a pot of salted water following the package directions. Drain them well and set them aside.
2Season the minced beef with salt and pepper. Heat a splash of sesame oil in a pan over high heat. Add the beef and fry for about 6 minutes. Let it clump slightly without stirring too much so it develops a rich, brown crust.
3Stir the garlic, chili flakes, and chopped spring onions into the beef. Cook for 2 to 3 minutes until fragrant. Stir constantly here, as garlic burns fast and turns bitter.
4Toss the drained noodles into the pan along with a splash of soy sauce. Stir well to coat the noodles in the savory beef drippings, then remove from the heat.
Notes
Technique: Resist the urge to constantly stir the beef. Letting it sit undisturbed in the hot pan is the secret to getting those crispy, caramelized edges.
Swap: If you don't have fresh spring onions, a handful of chopped chives or thinly sliced shallots works perfectly.
Spice level: Adjust the dried chili flakes to suit your preference, or substitute with a drizzle of chili oil right before serving.
