This quick and savory noodle dish features crispy minced beef, garlic, and spring onions tossed in soy sauce. Allowing the beef to clump slightly in the pan creates a deeply browned, flavorful crust that adds rich texture to the meal. It comes together in minutes, making it an ideal choice for a fast weeknight dinner. A pinch of dried chili flakes brings just the right amount of heat to balance the sesame oil.

Ingredients
1 nest of noodles
100g minced beef
1 garlic clove
Pinch of dried chilli flakes
3 spring onions, roughly chopped
Instructions
1Measure out a splash of soy sauce and set it aside for finishing the dish.
2Boil the noodles in a pot of salted water following the package directions. Drain them well and set them aside.
3Season the minced beef with salt and pepper. Heat a splash of sesame oil in a pan over high heat and fry the beef for about 6 minutes, letting it clump slightly to develop a rich brown crust.
4Stir the garlic, chili flakes, and chopped spring onions into the beef. Cook for a few minutes until fragrant, then toss in the drained noodles and the reserved soy sauce to combine.
Notes
Allowing the minced beef to clump together while frying creates crispy, caramelized edges that add massive flavor to the final dish.
