Maple Vanilla Fairy Butter

Sweet maple sugar and pure vanilla extract transform an ordinary stick of butter into something entirely special. This delicate compound butter gets rolled into a tight log and chilled, allowing you to shave it into elegant ribbons. They're exactly what your weekend pancakes, warm scones, or fresh sourdough French toast need. The subtle crunch of the sugar and the aromatic vanilla create a rich, warm flavor profile that elevates any breakfast spread. You'll wonder why you haven't been making it all along.

Equipment

  • Hand Mixer

Ingredients

  • ½ cup (1 stick) unsalted butter, softened
  • 4 tablespoons maple sugar
  • 1 tablespoon pure vanilla extract
  • ¼ teaspoon salt

Instructions

  1. 1Beat the softened butter, maple sugar, vanilla extract, and salt until smooth. Transfer the mixture into the bottom corner of a resealable plastic bag and press it tightly into a cylindrical log.
  2. 2Roll the plastic bag tightly around the butter log, pushing out all excess air. Seal the bag and chill in the refrigerator or freezer for at least 1 hour until very firm. Soft butter won't curl properly.
  3. 3Place a small bowl in the refrigerator to cool. Remove the firm butter log from the fridge or freezer and quickly peel back the plastic wrapping.
  4. 4Drag a sharp vegetable peeler firmly down the length of the butter log to create thin ribbons. Drop each curled piece immediately into your cold bowl so they hold their shape.

Notes

  • Storage: Keep the finished butter curls tightly covered in the refrigerator until you're ready to serve.
  • Make ahead: You can prepare the butter log up to a week in advance and keep it in the fridge, or freeze it for up to a month before curling.
  • Variation: For an alternative presentation, freeze the butter log for at least one hour and grate it directly over warm French toast or pancakes instead of peeling it.
