Ingredients
  

Main Ingredients
  • Filling: 1 lb flank steak rubbed with chipotle, 1 green pepper, 1 onion, 1 cup cooked rice, 1 cup black beans, 1 cup cheddar
  • Salsa Verde: 7oz green tomatoes tomatillos, 1 onion, cilantro, 1 jalapeño, 2 garlic cloves, juice of 2 limes
  • Wrap: 4 large tortillas 12 inch

  • Blender (for salsa)
  • Grill pan or skillet
  • Knife

Method
 

Instructions
  1. Blitz all salsa ingredients in a blender until smooth.
  2. Sauté pepper and onion strips until crisp-tender; set aside.
  3. Sear chipotle-rubbed steak for 4-6 mins per side. Rest for 5 mins, then slice thinly.
  4. Layer tortillas with rice, beans, peppers, steak, cheese, and a dollop of salsa.
  5. Roll up tightly. Toast the burrito in the pan for 2 mins to seal the seam.
