- Blitz all salsa ingredients in a blender until smooth.
- Sauté pepper and onion strips until crisp-tender; set aside.
- Sear chipotle-rubbed steak for 4-6 mins per side. Rest for 5 mins, then slice thinly.
- Layer tortillas with rice, beans, peppers, steak, cheese, and a dollop of salsa.
- Roll up tightly. Toast the burrito in the pan for 2 mins to seal the seam.
