Ingredients

  • 2 cups firmly packed fresh basil leaves
  • ¾ cup grated Parmesan cheese
  • ¼ cup pine nuts, toasted* if desired
  • ½ cup olive or vegetable oil
  • 3 cloves garlic

Instructions

  1. 1Warm the pine nuts in a dry skillet over medium heat for 5 to 7 minutes. Stir the nuts frequently until they begin to brown, then stir constantly until they achieve a light golden color.
  2. 2Place the fresh basil leaves, grated Parmesan cheese, toasted pine nuts, oil, and garlic cloves into a food processor or blender. Process on medium speed for about 3 minutes. Don't skip stopping occasionally to scrape down the sides with a rubber spatula so the sauce blends completely smooth.

Notes

  • Storage: Store leftover pesto tightly covered in the refrigerator for up to 5 days, or freeze it for up to 1 month.
  • Appearance: The color of the pesto will naturally darken as it sits.
