- Cut off florets (save stalks). Wash.
- Boil florets in salted water until tender-crisp. Cool.
- Cut larger florets lengthwise to be uniform.
- Dip in beaten egg, then bread crumbs.
- Fry in 1/2 inch hot oil until golden brown.
- Drain and salt.
