Ingredients
  

Main Ingredients
  • 2 cups potatoes, diced very fine (480 ml)
  • 1/4 cup vegetable oil (60 ml)
  • 1 cup onion sliced fine (240 ml)
  • 5 eggs
  • Salt
  • Black pepper, ground fresh from the mill
  • 2 tablespoons butter (30 g)

Method
 

Instructions
  1. Fry the potatoes in the oil until they have formed a golden crust all over. Use a slotted spoon to transfer them to a paper towel-lined platter.
  2. Put the sliced onion in the same pan with the same oil. Cover and cook on low heat until wilted.
  3. Uncover and cook until onion becomes colored a rich golden brown. Transfer to a bowl to cool.
  4. Pour out oil and wipe pan clean.
  5. Beat the eggs in a bowl and add the potatoes and onion, salt, and a few grindings of pepper. Mix thoroughly.
  6. Melt the butter in the pan, add the egg mixture, and cook following the basic method (stovetop then broiler).
