- Fry the potatoes in the oil until they have formed a golden crust all over. Use a slotted spoon to transfer them to a paper towel-lined platter.
- Put the sliced onion in the same pan with the same oil. Cover and cook on low heat until wilted.
- Uncover and cook until onion becomes colored a rich golden brown. Transfer to a bowl to cool.
- Pour out oil and wipe pan clean.
- Beat the eggs in a bowl and add the potatoes and onion, salt, and a few grindings of pepper. Mix thoroughly.
- Melt the butter in the pan, add the egg mixture, and cook following the basic method (stovetop then broiler).
