  • Potatoes: 5 large Russet potatoes quartered, skin on
  • Flavor: 8 tbsp butter 2 shallots (sliced), 2 garlic cloves (crushed)
  • Cream: 1/2 cup sour cream juice of 1 lemon

Method
 

Instructions
  1. Boil potatoes with skins on for 20 mins until tender.
  2. Fry shallots and garlic in a little butter until soft and browned.
  3. Drain potatoes and mash coarsely.
  4. Fold in sour cream, remaining butter, lemon juice, and the shallot mixture.
  5. Mix well, season, and serve hot.
