Strawberry Banana Smoothie Poppers

A blender pulls together one banana, three tubes of portable yogurt, a cup of frozen strawberries, and half a cup of orange juice into a smooth, thick mixture that gets poured into ice cube trays and frozen for about two hours. The fruit and yogurt combination freezes firm enough to pop out cleanly and eat by hand. Makes 6 servings — roughly one full tray of cubes. Pull a few from the freezer as needed rather than thawing the whole batch.

Equipment

  • Blender
  • Baking sheet

Ingredients

  • 1 medium banana
  • 3 tubes (2.25 oz each) portable yogurt, any flavor (from 1-lb 2-oz box)
  • 1 cup frozen unsweetened whole strawberries
  • ½ cup orange juice

Instructions

  1. 1Place the banana, yogurt, frozen strawberries, and orange juice in a blender. Blend on high speed for about 30 seconds until completely smooth.
  2. 2Pour about 1 tablespoon of the blended mixture into each section of your ice cube trays or silicone molds.
  3. 3Set the trays on a larger, flat baking sheet and transfer them to the freezer. The rigid sheet prevents spills when moving flexible silicone molds. Chill for at least 2 hours until completely firm.
  4. 4Pop the frozen smoothie pieces out of the trays and transfer them to a resealable freezer bag to store.

Notes

  • Storage: Keep the frozen poppers in an airtight freezer bag for up to a month.
  • Equipment: Use fun-shaped silicone molds or standard ice cube trays to create these bite-sized treats.
  • Swap: You can use any flavor of portable yogurt tubes you have on hand.
