Grapefruit Thyme Popsicles

These frozen treats combine the sweet and tart flavor of fresh grapefruit with the woodsy aroma of thyme. A simple homemade thyme syrup blends with fresh grapefruit juice and hydrating coconut water to create a refreshing base. Each mold holds a fresh grapefruit segment and a sprig of thyme for a beautiful presentation. They are a perfect cooling snack for warm afternoons or a fun treat to share with kids. Ingredients

  • 3 tablespoons water
  • 2 tablespoons maple syrup
  • 1 small bunch thyme, plus 10 extra sprigs
  • 2 cups (480 ml) fresh grapefruit juice (from about 3 large)
  • 1 cup (240 ml) coconut water
  • 1 grapefruit, cut into 10 segments

Instructions

  1. 1Combine the water, maple syrup, and the small bunch of thyme in a small pot. Bring the mixture to a boil over high heat. Reduce the heat to medium and simmer for 3 minutes. Remove the pot from the heat and let it cool slightly.
  2. 2Pour the fresh grapefruit juice and coconut water into a pitcher. Stir in the cooled thyme syrup until well mixed.
  3. 3Drop one grapefruit segment and one extra thyme sprig into each popsicle mold. Pour the juice mixture over the fruit, leaving a little space at the top of each mold. Secure the covers, insert the popsicle sticks, and freeze for at least 4 hours until completely solid.
