Green Rice

This simple pressure cooker rice makes a perfect savory side dish for any weeknight dinner. Cooking the jasmine rice in chicken broth instead of water adds a rich, comforting flavor to every bite. A touch of olive oil keeps the grains separate and fluffy. Using an Instant Pot means the process is entirely hands-off, giving you perfectly tender rice with minimal effort.

Ingredients

  • 1 ¼ cups unsalted chicken broth
  • 1 cup jasmine rice, rinsed and drained
  • 1 tsp. olive oil
  • 1 tsp. kosher salt

Instructions

  1. 1Place the chicken broth, rinsed jasmine rice, olive oil, and kosher salt into the bowl of a pressure cooker. Stir well to ensure the liquid covers the rice completely. Secure the lid and close the steam valve. Select the rice setting to cook. Once the cooking cycle finishes, leave the pot alone for 10 minutes.
  2. 2Open the steam valve to release any leftover pressure. Take off the lid carefully to avoid the hot steam. Fluff the cooked rice gently with a fork and serve it right away.
