6 ripe white nectarines
2 teaspoons olive oil
1 1 / 2 cups traditional dulce de leche
1 1 / 2 cups ricotta cheese
Instructions
1Prepare the fresh mint leaves by washing and drying them for the final garnish.
2Preheat your grill to medium-high heat. Cut the nectarines in half and remove the pits. Brush the exposed flesh lightly with olive oil.
3Place the nectarines on the hot grill with the cut side down. Leave them in place for about 5 minutes until dark grill marks appear.
4Spread a quarter cup of dulce de leche onto each plate. Spoon a quarter cup of ricotta cheese directly over the caramel. Arrange two grilled nectarine halves on top with the charred side facing up, then finish with the prepared mint leaves.
5Serve the warm grilled fruit right away, offering crusty bread on the side to scoop up the melted cheese and caramel.
