Sweet summer stone fruit, still warm from the grates, meets a rich bed of dulce de leche and creamy ricotta cheese. The intense heat caramelizes the natural sugars in the nectarines, creating deep, smoky char marks that balance the sweet caramel base. It's a surprisingly simple dish that works just as well for a light dessert as it does for a savory-leaning appetizer. Grab some crusty bread to scoop up every last drop of the melted cheese and caramel mixture.

Ingredients

  • 6 ripe white nectarines
  • 2 teaspoons olive oil
  • 1 1 / 2 cups traditional dulce de leche
  • 1 1 / 2 cups ricotta cheese

Instructions

  1. 1Preheat your grill to medium-high heat. Cut the nectarines in half and remove the pits, then brush the exposed flesh lightly with olive oil. The oil prevents sticking and encourages better caramelization.
  2. 2Place the nectarines on the hot grill with the cut side down. Leave them undisturbed for about 5 minutes until dark grill marks appear.
  3. 3Spread 1/4 cup of dulce de leche onto each of the 6 plates, then spoon 1/4 cup of ricotta cheese directly over the caramel. Arrange two grilled nectarine halves on top with the charred side facing up.
  4. 4Garnish with fresh mint leaves and serve immediately with crusty bread to scoop up the melted cheese and caramel.

Notes

  • Swap: You can easily substitute fresh peaches if nectarines aren't available.
