- Wash and dry fish steaks. Dredge in flour.
- Sauté fish in half the oil until cooked (5 mins one side, 4 mins other). Discard oil from pan.
- In a saucepan, cook onion in remaining oil until pale gold. Add parsley and salt.
- Add wine and anchovies. Cook, mashing anchovies, until wine evaporates by half.
- Pour sauce over fish in the sauté pan. Add pepper. Cook 2 minutes, basting often.
- Transfer carefully to platter, pour sauce over, and serve.
