Halibut Steaks Sauced with White Wine and Anchovies

Halibut steaks are sautéed until golden, then dressed with a savory sauce of white wine, onions, and anchovies. A robust Italian way to serve firm fish steaks.

Ingredients
  

Main Ingredients
  • 2 pounds halibut OR other fish steaks in slices 1 inch thick (900 g)
  • 1/2 cup extra virgin olive oil (120 ml)
  • 2/3 cup flour, spread on a plate (90 g)
  • 1 1/2 cups onion chopped fine (360 ml)
  • 3 tablespoons chopped parsley (45 ml)
  • Salt
  • 2/3 cup dry white wine (160 ml)
  • 1 or 2 flat anchovy fillets, chopped to a pulp
  • Black pepper, ground fresh from the mill

Method
 

Instructions
  1. Wash and dry fish steaks. Dredge in flour.
  2. Sauté fish in half the oil until cooked (5 mins one side, 4 mins other). Discard oil from pan.
  3. In a saucepan, cook onion in remaining oil until pale gold. Add parsley and salt.
  4. Add wine and anchovies. Cook, mashing anchovies, until wine evaporates by half.
  5. Pour sauce over fish in the sauté pan. Add pepper. Cook 2 minutes, basting often.
  6. Transfer carefully to platter, pour sauce over, and serve.
