Ingredients
  

Main Ingredients
  • Dry: 1 cup cornmeal 1/2 cup flour, 1 tsp baking powder, 1 tsp sugar, 1/2 tsp cayenne
  • Flavor: 1 cup grated cheddar 1 jalapeño (minced), 4 scallions
  • Wet: 1 cup buttermilk 1 egg
  • Fry: Peanut oil

Equipment

  • Deep frying pot
  • Whisk
  • Ice cream scoop

Method
 

Instructions
  1. Combine dry ingredients with cheese, jalapeño, and scallions in a bowl.
  2. Whisk buttermilk and egg, then fold into the dry mix. Let rest 10 mins.
  3. Heat oil to 375 degrees F (190 degrees C).
  4. Drop tablespoons of batter into the oil and fry 2-3 mins until golden.
  5. Drain on paper towels and serve hot.
