Ingredients

  • 1 pound whole-wheat bowtie pasta
  • 6 tablespoons light mayonnaise
  • ⅓ cup grated Parmesan cheese
  • 3 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, crushed with press
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 large bunch of kale, stemmed and chopped
  • 8 medium radishes, cut into quarters

Instructions

  1. 1Boil the whole-wheat bowtie pasta according to the package instructions until tender.
  2. 2Whisk the light mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, olive oil, crushed garlic, salt, and pepper in a large mixing bowl. Add the chopped kale and toss well to coat the leaves in the dressing.
