Maple Pancake Breakfast Sandwiches

Sweet cinnamon-spiced maple pancakes meet savory breakfast sausage in this ultimate morning mashup. You'll swap the usual biscuits for fluffy homemade pancake buns, layering them with melted cheddar cheese and a freshly fried egg. It's the exact right balance of rich egg yolk, salty pork, and sweet vanilla batter in a single sandwich. When you can't decide between a sweet or savory start to the day, this recipe covers all the bases.

Equipment

  • Skillet
  • Stovetop

Ingredients

  • 1 cup flour
  • 2 Tbsp. sugar
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 cup buttermilk
  • 1 egg, beaten
  • 2 Tbsp. maple syrup
  • 2 Tbsp. vegetable oil
  • 1 tsp. vanilla extract

Instructions

  1. 1Whisk the flour, sugar, cinnamon, baking powder, baking soda, and salt together in a medium mixing bowl.
  2. 2Blend the buttermilk, egg, maple syrup, vegetable oil, and vanilla extract in a separate small bowl.
  3. 3Pour the wet mixture into the dry ingredients and stir gently until just combined. Don't overmix, as it makes the pancakes tough; a few lumps are fine.
  4. 4Warm a large skillet or griddle on the stove over medium heat. Drop 1/4 cup portions of batter onto the hot surface. Cook for about 3 minutes until bubbles form and pop on the surface. Flip each pancake and cook until the centers are set, then repeat with the rest of the batter.
  5. 5Coat a nonstick skillet with cooking spray and place it over medium heat. Crack 5 eggs into the pan, cooking until the whites turn opaque, then carefully flip them over. Cook for another minute or two until the yolks reach your preferred doneness, then transfer to a plate.
  6. 6Place 5 sausage patties in the skillet. Cook for 5 minutes on each side until fully browned, then melt a slice of cheddar cheese over each patty.
  7. 7Assemble the sandwiches by placing a cheese-topped sausage patty onto a pancake. Add a fried egg over the sausage, finish with a second pancake on top, and serve warm.

Notes

  • Swap: Use cooked bacon or sliced ham instead of sausage patties for a different flavor profile.
  • Eggs: Fry the eggs sunny-side up if you prefer a runny yolk, or cook them completely through for a less messy sandwich.
  • Make ahead: You can cook the pancakes in advance and toast them lightly before assembling the sandwiches.
