A staple of British summer afternoons, this refreshing fruit iced tea blends a classic spirit with cold mint and bright citrus. It's a less sweet, highly drinkable alternative to traditional fruit cups while keeping all the classic garnishes you love. Bright orange and lemon juices, fresh strawberries, and an herbal infusion create a crisp, cooling drink that easily beats the heat.

Ingredients

  • 4 tea bags
  • 20g pack mint
  • 100g/4oz caster sugar
  • 400ml/14fl oz Pimm’s No 1
  • 2 Once cool, remove the mint, add the orange juice, lemon juice and Pimm’s, and chill thoroughly. Can be made up to a day ahead.

Instructions

  1. 1Juice two large oranges and two lemons, reserving a few slices of each for garnish. Slice a handful of fresh strawberries and set them aside.
  2. 2Place the tea bags and half of the fresh mint into a large jug. Pour in 1.2 liters of boiling water and let it steep for 10 minutes. Discard the tea bags and stir in the caster sugar until dissolved.
  3. 3Let the tea cool completely to room temperature. Remove the mint, then stir in the fresh orange juice, lemon juice, and Pimm's. Letting the tea cool first prevents the fresh juices from cooking and altering their bright flavor. Chill the mixture thoroughly in the refrigerator.
  4. 4Fill glasses with plenty of ice and pour the chilled tea mixture over the top. Garnish each drink with the reserved orange, lemon, and strawberry slices, along with the remaining fresh mint sprigs.

Notes

  • Make ahead: Prepare the tea mixture up to a day in advance and keep it chilled in the refrigerator. Add the fresh fruit garnishes and ice just before serving.
  • Sweetness: Adjust the caster sugar to your preference, keeping in mind that the spirits and fruit juices will add their own natural sweetness.
