Ingredients

  • Olive oil, for frying
  • 1 ripe tomato, diced
  • 1 spring onion, trimmed and chopped
  • 8 cooked king prawns, peeled and deveined ( see here )
  • Pinch of dried chilli flakes, to taste
  • 4 eggs, beaten
  • 1 tsp chopped fresh oregano or pinch of dried oregano
  • 50g feta cheese, crumbled
  • 1 . Preheat the grill to medium.
  • 2 . In a small frying pan, heat a dash of oil and add the tomato and spring onion.

Instructions

  1. 1Preheat the broiler to medium.
  2. 2Heat a splash of oil in a small frying pan over medium heat. Add the diced tomato and chopped spring onion, season with salt and pepper, and cook for 2 to 3 minutes until the tomatoes begin to soften.
  3. 3Stir in the cooked king prawns and a pinch of dried chili flakes. Toss everything together for 1 minute until warmed through, then remove from the heat.
  4. 4Place a separate broiler-safe frying pan over medium heat with a little oil. Season the beaten eggs with salt and pepper, then pour them into the hot pan.
  5. 5Let the eggs cook undisturbed for 1 to 2 minutes until the bottom sets while the top stays loose and runny. Don't stir them, as you want a solid base for the toppings.
  6. 6Scatter fresh oregano over the eggs, then spoon the warm tomato and prawn mixture evenly across the surface. Top with crumbled feta cheese, a final pinch of seasoning, and a light drizzle of olive oil.
  7. 7Transfer the pan under the hot broiler for 2 to 3 minutes until the eggs are completely cooked and the cheese softens. Slide onto a plate to serve.

Notes

  • Terminology: If you're outside North America, finishing the omelette under the broiler means placing it under a hot grill to set the eggs without flipping.
