  • 1 (11-ounce) can mandarins in light syrup, drained and liquid reserved
  • 4 scallions (green onions), green and white parts, thinly sliced
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons white wine vinegar or rice wine vinegar
  • 1 tablespoon Dijon mustard 2 teaspoons honey
  • ¼ teaspoon kosher or sea salt ¼ teaspoon black pepper
  • 2 heads romaine lettuce, chopped (about 10 cups)

Instructions
