Ingredients

  • 2 boxes (5.2 oz each) seasoned hash brown potato mix for skillets
  • 1 package (8 oz) cream cheese, cut into ½-inch cubes
  • 6 oz smoked salmon, flaked
  • 1 tablespoon dried chopped onion
  • 1 cup Original Bisquick mix
  • ½ teaspoon pepper
  • 3 cups milk
  • 4 eggs
  • 4 oz pepper Jack cheese, shredded
  • ½ cup chopped green onion tops (green part only)
  • 1 Spray 13 x 9-inch (3-quart) glass baking dish with cooking spray.

Instructions

  1. 1Coat a 13x9-inch glass baking dish with cooking spray. Spread one box of the seasoned hash brown potatoes evenly across the bottom. Scatter half of the cream cheese cubes and all of the flaked smoked salmon over the potatoes. Add the dried chopped onion, then layer on the remaining box of potatoes and the rest of the cream cheese cubes.
  2. 2Whisk the baking mix, black pepper, milk, and eggs in a large bowl until smooth. Pour this liquid mixture evenly over the layered ingredients in the baking dish. Scatter the shredded pepper Jack cheese across the top.
  3. 3Cover the baking dish tightly and refrigerate for at least 4 hours, or up to 24 hours. This resting period allows the dry baking mix and potatoes to fully absorb the liquid for a fluffy texture.
  4. 4Preheat the oven to 375°F. Uncover the baking dish and bake for 32 to 38 minutes, until the top is golden brown and a knife inserted into the center comes out clean. Let the casserole rest for 10 minutes so the slices hold their shape. Garnish with the chopped green onion tops and cut into squares.

  • Make ahead: Assemble this casserole up to 24 hours in advance. Keep it tightly covered in the fridge until you're ready to bake.
  • Storage: Keep leftover squares in an airtight container in the fridge for up to 3 days.

  • Swap: If you don't have pepper Jack, sharp cheddar or Gruyere makes a fantastic substitute.
