Ingredients
  

Main Ingredients
  • 2 1/2 pounds oxtail
  • 1/4 pound fresh pork jowl/rind (optional)
  • 2/3 cup chopped onion
  • 2/3 cup chopped carrot
  • 1/2 teaspoon garlic
  • 1 1/2 cups dry white wine
  • 1/2 cup tomatoes
  • 1 1/2 cups celery, chopped coarse

Method
 

Instructions
  1. Boil pork rind (if using) and cut into strips.
  2. Sauté onion, carrot, garlic, parsley.
  3. Add oxtail and pork. Brown.
  4. Add wine, then tomatoes and water.
  5. Simmer covered 1.5 hours.
  6. Add celery. Cook 45 mins more until tender.
  7. Degrease and serve.
