- Boil pork rind (if using) and cut into strips.
- Sauté onion, carrot, garlic, parsley.
- Add oxtail and pork. Brown.
- Add wine, then tomatoes and water.
- Simmer covered 1.5 hours.
- Add celery. Cook 45 mins more until tender.
- Degrease and serve.
