Kiwi and Raspberry Yogurt Parfaits

Fresh kiwi wedges and tart raspberries bring a pop of holiday color to these layered morning cups. You'll stack thick vanilla Greek yogurt with crunchy granola to build a breakfast that feels like a special occasion. A generous drizzle of honey balances the tart fruit, while chopped pistachios add a final layer of texture. They're simple enough to assemble on a busy morning, yet striking enough for a festive brunch spread.

Ingredients

  • 6 kiwi fruits, peeled and each cut into 6 wedges
  • 2 cups vanilla-flavor Greek yogurt
  • 2 cups granola (without raisins)
  • ½ cup honey
  • 1 cup fresh raspberries
  • 1½ Tbsp. chopped pistachios

Instructions

  1. 1Place 2 kiwi wedges in the bottom of each of 6 parfait glasses. Layer with about 2½ Tbsp. yogurt and about 2½ Tbsp. granola. Repeat the layers once. Building in multiple thin layers ensures an even mix of fruit, yogurt, and crunch.
  2. 2Top each parfait with 2 more kiwi wedges, and drizzle each with a generous tablespoon of honey. Divide the raspberries among the glasses and sprinkle evenly with pistachios. Adding the nuts at the very end keeps them perfectly crisp.

Notes

  • Make ahead: You can assemble the yogurt and fruit layers the night before, but wait to add the granola and pistachios until right before eating so they stay crunchy.
  • Swap: If you don't have fresh raspberries, pomegranate seeds make a great festive alternative.
  • Storage: Keep any leftover assembled parfaits in the fridge for up to 2 days, noting the granola will soften over time.
