Deeply spiced and gently warming, this classic mulled wine fills the kitchen with the scent of cinnamon and citrus as it simmers. You'll combine an everyday bottle of red wine with clear apple juice and a generous splash of brandy for an extra kick. Fresh slices of orange and lemon mingle with cloves and bay leaves, creating a rich, complex flavor profile. It's exactly what you want in your mug on a chilly winter night.

Ingredients
1 bottle inexpensive red wine
300ml clear apple juice
300ml water
1 orange, sliced
½ lemon, sliced
1 cinnamon stick, halved
6 cloves
2 bay leaves
125g caster sugar
150ml brandy
Instructions
1Combine the red wine, clear apple juice, and water in a large saucepan.
2Stir in the sliced orange, sliced lemon, halved cinnamon stick, cloves, bay leaves, caster sugar, and brandy. Mix well until the sugar dissolves.
3Cover the saucepan and simmer gently for at least 20 minutes until the liquid is piping hot. Keep the heat low so the alcohol doesn't boil off, then ladle into heatproof glasses.
Notes
Flavor: Allow the wine to simmer longer than 20 minutes if you prefer a deeper, more developed spice flavor.
Wine choice: Use an inexpensive, fruit-forward red wine like Merlot or Grenache. Save your expensive bottles for drinking plain.
Make ahead: You can simmer the wine, let it cool, and store it in the fridge for up to 3 days. Reheat gently on the stove before serving.
