Lamb kidneys pre-cooked briefly to remove strong flavors, then sautéed with sweet onions and parsley.

Ingredients
  

Main Ingredients
  • 16 lamb kidneys
  • 1/3 cup wine vinegar (for soaking)
  • 1 tablespoon vegetable oil
  • 3 tablespoons butter
  • 1/2 cup chopped onion
  • 3 tablespoons chopped parsley

Method
 

Instructions
  1. Soak kidneys in vinegar/water 30 mins.
  2. Slice thin, discard white core.
  3. Sauté alone 2 mins until gray/shedding liquid. Discard liquid. Rinse.
  4. In clean pan, sauté onion in oil/butter.
  5. Add kidneys and parsley. Sauté 2 minutes.
  6. Serve immediately.
