- Soak kidneys in vinegar/water 30 mins.
- Slice thin, discard white core.
- Sauté alone 2 mins until gray/shedding liquid. Discard liquid. Rinse.
- In clean pan, sauté onion in oil/butter.
- Add kidneys and parsley. Sauté 2 minutes.
- Serve immediately.
