- Thread skewers: Sausage, Sage, Veal, Pancetta.
- Brown deeply in oil.
- Add wine, evaporate briefly.
- Cover and simmer 25 mins until tender.
- Transfer skewers to platter.
- Deglaze pan with 1/3 cup water. Pour over skewers.
