Skewered Veal and Sausage (All'uccelletto)

Veal cubes and pork sausage skewered with sage and pancetta, then pan-roasted with white wine. Served over soft polenta.

Ingredients
  

Main Ingredients
  • 1 1/4 pounds mild pork sausage
  • 20 whole fresh sage leaves
  • 1 pound boneless veal shoulder, cubed
  • 1/2 pound pancetta (thick slice), cubed
  • 3 tablespoons vegetable oil
  • 2/3 cup dry white wine
  • 12 skewers (6-8 inches)

Method
 

Instructions
  1. Thread skewers: Sausage, Sage, Veal, Pancetta.
  2. Brown deeply in oil.
  3. Add wine, evaporate briefly.
  4. Cover and simmer 25 mins until tender.
  5. Transfer skewers to platter.
  6. Deglaze pan with 1/3 cup water. Pour over skewers.
