1 1/4 pounds mild pork sausage
20 whole fresh sage leaves
1 pound boneless veal shoulder, cubed
1/2 pound pancetta (thick slice), cubed
3 tablespoons vegetable oil
2/3 cup dry white wine
12 skewers (6-8 inches)
Method
Instructions
Thread skewers: Sausage, Sage, Veal, Pancetta.
Brown deeply in oil.
Add wine, evaporate briefly.
Cover and simmer 25 mins until tender.
Transfer skewers to platter.
Deglaze pan with 1/3 cup water. Pour over skewers.
