Shredded cabbage slow-cooked in a sealed pot with onion, garlic, olive oil, and vinegar until meltingly tender.

  • 2 pounds cabbage (Green, Red, or Savoy)
  • 1/2 cup chopped onion
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon chopped garlic
  • 1 tablespoon wine vinegar

Method
 

Instructions
  1. Shred cabbage very fine (discard core).
  2. Sauté onion in oil until deep gold. Add garlic.
  3. Add cabbage, toss to coat and wilt.
  4. Add salt, pepper, vinegar.
  5. Cover tightly. Cook on minimum heat for 1.5 hours.
  6. Add a splash of water only if absolutely needed.
