Green beans and sweet carrots slow-cooked with diced mortadella (or ham) and butter. A flavorful side dish.

Ingredients
  

Main Ingredients
  • 1 pound fresh green beans
  • 3 or 4 medium carrots (cut into sticks)
  • 1/4 pound mortadella OR boiled ham (diced into 1/4-inch cubes)
  • 3 tablespoons butter
  • Salt

Method
 

Instructions
  1. Trim, soak, and boil green beans until firm-tender. Drain.
  2. Peel carrots and cut into sticks slightly thinner than beans.
  3. Put beans, carrots, diced meat, butter, and salt in a sauté pan.
  4. Cook over medium heat, turning frequently.
  5. When butter foams, cover pan.
  6. Cook until carrots are just tender (check after 5-6 mins).
