Main Ingredients
  • Dry: 1.25 cups all-purpose flour 1.25 cups cornmeal (fine polenta), 2 tsp baking powder, 1 tsp salt, pinch of sugar
  • Wet: 1.25 cups buttermilk 1 egg (beaten), 1/4 cup vegetable oil

  • Cast iron skillet or round pan
  • Bowl
  • Whisk

Method
 

Instructions
  1. Preheat oven to 425 degrees F (220 degrees C). Grease pan.
  2. Mix dry ingredients.
  3. Whisk wet ingredients and stir into dry (do not overmix).
  4. Pour batter into the prepared pan.
  5. Bake for 25-30 mins until golden.
